Summary

SUITABLE TEMPERATURES FOR THE FROZEN STORAGE OF ANTARCTIC KRILL WERE INVESTIGATED WITH BLOCKS MADE FROM THREE DIFFERENT FREEZING METHODS: FREEZING WHOLE, UNTREATED AND UNCOOKED PORTIONS, FREEZING AFTER PEELING AND EVISCERATING AND FREEZING AFTER COOKING. CONTENT OF MYOFIBRILLAR PROTEIN IN MUSCLE, PH OF MUSCLE AND DRIP LOSS WERE MEASURED DURING FROZEN STORAGE AT 253, 233 AND 173 K (-20, -40 AND -100 DEG C) FOR SIX MONTHS. PREFERABLE STORAGE TEMPERATURE IS BELOW 233 K AND QUALITY IS MORE STABLE AFTER COOKING.
