Summary
The paper is given the generalized formulas helpful to designate the specific heat and the thermal conductivity for the products before and after the freezing process. It was found that the properties depend of dominate way from the water content in the product. During the freezing process, as a result of phase transformations, the properties also depend on the products temperature. Furthermore was determined the formulas to designate the coefficient of mass transfer, associated with the wither process during freezing and storage of meal products.
