Summary

UNINOCULATED RAW MILK SAMPLES WERE INCUBATED AT 275, 277 AND 280 K (2, 4 AND 7 DEG C) FOR 6 DAYS. NO PRONOUNCED LAG PHASE OF GROWTH WAS OBSERVED WITH THE MESOPHILIC, PSYCHROTROPHIC OR PSEUDOMONAD POPULATIONS. THE RATE OF INCREASE OF THE 3 MICROBIAL POPULATIONS WAS LINEARLY RELATED TO THE STORAGE TEMPERATURE. THE RESULTS INDICATE THAT STORAGE OF RAW MILK AT 275 K RATHER THAN HIGHER STORAGE TEMPERATURES IS BENEFICIAL AND THAT ACID DEGREE VALUE CAN BE USED, TO SOME EXTENT, TO PREDICT THE SPOILAGE POTENTIAL OF RAW MILK.
