Comparison of vacuum efficiency and modified atmospheres as functions of pH and temperature, to inhibit Y. enterocolitica, A. hydrophila and L. monocytogenes in packed meats. CO2 enriched atmospheres are the most efficient, particularly when meat pH and storage temperature are reduced.
