Growth-survival of natural flora and Listeria monocytogenes on refrigerated uncooked pork and turkey packaged under modified atmospheres.

Summary

Meat samples innoculated with L. monocytogenes were packaged under different atmospheres (air, 100% N2, 20% CO2-80% O2 and 80% CO2-20% O2) before storage at 1 and 7 deg C. Modified atmosphere packaging extends keeping time. Bacterial growth, especially of L. monocytogenes, was inhibited considerably at 1 deg C.
