This guide was produced by the Concerted Action n. 7 "Food safety based on the application of hazard analysis critical control point", as part of a Food Linked Agro Industrial Research (FLAIR) programme organized and sponsored by the European Community. The guide was developed by consumers, scientists and professionals from nine countries, in the hope that it will promote safety in food production, through the application of the HACCP system.
