Summary

Health hazards arise in many complex manners and are the result of gradual changes in the food chain over the past few decades. The food-supply chain is a complex entity with four main links (production, processing, distribution and retail sale) that overlap to various extents; the links are increasingly far apart in terms of time and space, making regulating interactions between the links increasingly difficult. Moreover, this chain is just one component of a complex socioeconomic framework: present management of the supply chain reflects evolution of society as a whole.
