Summary

High pressures make freezing rapid and homogenous. Pressure thawing reduces the volume of drip and inhibits microbial development. After a description of the special features of the water-ice phase change at high pressure, the advantages and the applications of this new technology are presented and discussed. A simulation of the thawing process is proposed.
