Summary
Gases are used to remove oxygen from packaging atmospheres surrounding foodstuffs. The aim is to slow deterioration, enabling the product to be served in optimal condition. Chemical additives can also be rendered harmless by using a suitable atmosphere within chilled packaging (this is an alternative that will be highly valued by consumers).
