Summary
There are no refrigeration media that are as versatile and easy to use as the liquid cryogen gases nitrogen and carbonic acid. Both gases behave neutrally to foods and can therefore be used in various ways for chilling and freezing and as protective gases in packaging without any problems. The authors give a number of examples of the use of refrigeration in meat processing factories.
