Summary

Immersion refrigeration and freezing consists of placing in contact the product to be refrigerated and frozen (either wrapped or not) and a low temperature solution, chosen according to the temperature to be reached and to its compatibility with the product treated. In theory, immersion refrigeration and freezing can be applied to any product. Immersion refrigeration and freezing is a polyvalent and efficient process because of the speed of heat transfer, ease of implementation and IQF. However, some characteristics may be considered to be technological locks and will be examined more closely, for instance the elimination of solute traces on unwrapped products, or the reprocessing of immersion baths.
