Study of a mixed freezing process.

Etude d'un procédé de congélation par froid mixte.

Summary

Mixed freezing combines mechanical and cryogenic refrigerating processes. One of these processes, consisting of immersion of food products in liquid nitrogen, followed by supplemental freezing through cooled pulsed air in a mechanical system, was studied. The value of this process compared to the usual pulsed-air freezing process was marked through both experimentation and modelling.
