Summary

Fruit and vegetables are metabolically active after harvest, and as such are subject to deterioration. Research on preservation methods has been carried out to extend the storage life of these products, valued for their nutritional properties. Modified atmosphere, usually containing low O2 (1-15 kPa) and high CO2 (3-20 kPa), is employed for this purpose. This document presents an overview of the utilization of modified atmosphere in association with cold storage of fruits and vegetables, more specifically the use of modified atmosphere packaging, which underwent significant expansion with the development of fresh-cut produce: a view on the packages currently in use, system optimization and effects on produce physiology.
