Summary

IN JAPAN, YEAR-ROUND SUPPLY SYSTEMS OF MAIN VEGETABLES HAVE BEEN ESTABLISHED IN RECENT YEARS. THE NECESSITY OF LONG-TERM STORAGE OF VEGETABLES HAS THEREFORE DECREASED. PRECOOLING FACILITIES, REFRIGERATED VEHICLES, WHOLESALE MARKETS AND RETAIL MARKETS ARE IMPORTANT FACILITIES FOR MAINTAINING VEGETABLE QUALITIES. VEGETABLE STORAGE IS EXPLAINED IN THE FOLLOWING METHODS AND FACILITIES: SOIL-HOLE STORAGE, SNOW STORAGE, REFRIGERATED STORAGE, CONTROLLED ATMOSPHERE STORAGE, MODIFIED-ATMOSPHERE STORAGE AND HYPERBARIC STORAGE.
