PRE-CLIMACTERIC, HARD-GREEN < ALPHONSO > MANGOES HELD DIRECTLY AT 283 K (10 DEG C) AND STORED FOR 30 DAYS DEVELOPED CHILLING INJURY, AS MANIFESTED BY SKIN PITTING AND A REDUCTION IN THE LEVEL OF CAROTENOIDS, AROMA AND FLAVOUR DURING RIPENING. PRE-CLIMACTERIC FRUITS, ADAPTED TO 283 K BY STEP-WISE EXPOSURE TO 293 AND 288 K (20 AND 15 DEG C) FOR 1 AND 2 DAYS, RESPECTIVELY, COULD WITHSTAND STORAGE AT 283 K FOR LONGER DURATIONS AND DEVELOPED BETTER FLESH COLOUR AND ORGANOLEPTIC QUALITIES ON RIPENING. HOWEVER, PRE-CLIMACTERIC FRUITS PREVIOUSLY STORED AT 283 K AND SUBSEQUENTLY RIPENED AT 300-305 K (27-32 DEG C) DID NOT SHOW CHILLING INJURY WHEN STORED AS LOW AS 277-280 K (4-7 DEG C) FOR UP TO 3 WEEKS, THUS EXTENDING THE SHELF-LIFE.
