Summary

This study demonstrated that Salmonella can survive on whole or sliced zucchini squash and for this reason can cause foodborne illness. Correct handling and food safety practices (washing, disinfection, cooking before consumption and above all storage at 3 to 5°C) were shown to mitigate risks.
