Summary
The postharvest development of the quality in terms of taste of apricots is dependent on the simultaneous development of the various parameters that come into play in its perception such as firmness, sugar, acids, aromas. However, to accommodate both quality in taste and cold storage, harvesting at an optimum maturity stage is essential.
