INFLUENCE OF AIR QUALITY ON COLD STORED FOODSTUFFS.

INFLUENCE DE LA QUALITE DE L'AIR SUR LES DENREES EN REGIME DE FROID.

Author(s) : RAGAZZI G.

Summary

FOR CHILLED FOODSTUFFS IT IS NECESSARY TO KEEP THE RELATIVE HUMIDITY PRESCRIBED FOR THE PRODUCT. IT HAS BEEN OBSERVED THAT THIS HUMIDITY CAN BE CONTROLLED BY MEANS OF AN ACCURATE DIMENSIONING OF THE EVAPORATOR, LIMITING ITS DEHUMIDIFYING EFFECT. FOR THE FROZEN PRODUCTS IT IS MORE IMPORTANT TO CONTROL INPUT OF REFRIGERATING ENERGY AS WELL AS THE INSULATION FACTOR WHICH, IN ANY CASE, IS DETERMINANT FOR THE QUALITY OF THE AIR.
