Summary

SURVIVAL, SPORE GERMINATION, AND GROWTH OF EMETIC AND DIARRHEAL TYPE STRAINS OF BACILLUS CEREUS WERE EVALUATED IN BROTH AND RICE MEDIA DURING HEATING AND COOLING. SAMPLES WERE HEATED TO 353 K (80 DEG C) (20 OR 40 K/HR) OR 363 K (90 DEG C) (CA. 900 K/H), PRIOR TO COOLING TO 283 K (10 DEG C) (5 OR 10 K/HR). FOLLOWING HEATING TO 353 K, GROWTH OCCURRED DURING 5 K/HR COOLING. AFTER HEATING TO 363 K, INACTIVATION OF THREE STRAINS OCCURRED DURING COOLING FROM 363 TO 353 K AND AGAIN FROM 323 TO 313 K (50 TO 40 DEG C). GREAT VARIABILITY WAS OBSERVED AMONG THE RESPONSES OF THE FOUR STRAINS.
