30 MIN. AFTER BLEEDING TEN SIDES OF ZEBU COW CARCASSES (NELORE BREED) WERE ELECTRICALLY STIMULATED (700 V, INTERMITTENT AC, DURING 2 MIN.). HOT BONING WAS PERFORMED 45 MIN. AFTER BLEEDING AND CUTS WERE BOXED. CUTS FROM FIVE SIDES WERE CHILLED AT 273 K (0C) AND THE REMAINDER WAS FROZEN AT 233 K (-40C) AND STORED AT 253 K (-20C). THE RESULTS OF VARIOUS MEASUREMENTS SHOWED THAT ELECTRICAL STIMULATION PLUS HOT BONING OF BEEF CARCASSES IS VIABLE TO ACHIEVE THE PROPOSED OBJECTIVES.
