Summary

The keeping quality of perishable products is related to keeping time and keeping conditions. The keeping time is generally defined with respect to a quality limit or practical quality life. This quality life depends on keeping conditions, temperature, humidity and atmosphere. The dependency of quality life on temperature can be expressed by an exponential function with two parameters which have specific values for each product: quality life at a reference temperature and temperature increment. Categories of products can be defined by pairs of values of these two parameters as basic information for computer-assisted decision-support systems.
