Summary
The goal of this research was to present the results of analysis of the mycological contamination of air in the external and internal spaces of refrigerating equipment. The level of air contamination with respect to the quantity and quality was set for particular months and seasons and its influence on the quality of the food. The research was conducted taking into consideration the temperature and humidity existing in old, renovated and new refrigerated premises. The level of contamination was measured. The identification of fungi was established, as was the percentage of particular fungi.
