LOW-FAT PREPARED FOOD AND DESSERTS: A RETURN TO TRADITION.
ALLEGE : PLATS CUISINES ET DESSERTS ; RETOUR AU TRADITIONNEL.
Author(s) : MARREC J. Y.
Type of article: Article
Summary
THE ARTICLE REVIEWS THE SHORT HISTORY OF LOW-FAT PREPARED FOOD AND DESSERTS. THE ABSENCE OF PRECISE REGULATIONS ALLOWS ALL KINDS OF APPROACHES, AS DICTATED MAINLY BY MARKETING. THE FOLLOWING TOPICS ARE DISCUSSED: THE WEIGHT OF THE PORTIONS, THEIR LEVELS OF CALORIES, THE CONTENT IN MINERALS AND VITAMINS, AND, ABOVE ALL, FLAVOUR. WITH LOW-FAT FOOD PRODUCTS ONE CAN EAT HEARTY WITHOUT GUILT. THEY HAVE BROUGHT BACK OLD OR FORGOTTEN TASTES AND FLAVOURS, AND, IN A CERTAIN SENSE, TRADITION IT-SELF. LITTLE IS SAID OF THIS IN THE ARTICLE, BUT MOST OF THESE PRODUCTS ARE DEEP-FROZEN. P. L.
