Lycopersicon esculentum: frozen slices.

Summary

Tomato cultivars were harvested red-ripe, cut into slices and frozen. Firmness was determined using the Kramer-share cell. It was still acceptable after 5 months. Organoleptic tests were satisfactory and flavour was still acceptable after 9 months for certain varieties. In general, the variety Hynema was the most successful. Frozen tomato slices can therfore be used for immediate preparation of pizzas, hamburgers, etc.
