Summary

Fruits and vegetables are highly perishable products; their postharvest life depends on their intrinsic characteristics as well as on the early and continuous use of refrigeration. The authors are trying to demonstrate that a cool chain at ca. 10°C allows, for a given quality of produce, to maintain an optimum market life throughout the distribution channels, without requiring enormous changes in equipment. On the basis of identification criteria that are representative for the product, the article shows, for three different species (asparagus, strawberry, and melon), that maintaining an average temperature is a means to control product quality.
