Temperature abuse evaluations: microbiological safety and quality parameters.

Summary

The authors present statistical and mathematical models for evaluating the effect of temperature abuse on the shelf life of chilled fruits and vegetables. The quality indicator used in predicting shelf life was microbial growth in the relevant product. Methodologies are presented for evaluating the effect of the experimental variability in parameters describing the heat transfer and food spoilage. These methodologies were developed on the basis of digital mathematical procedures.
