Summary

THE AROMAS OF FRESH AND DEEP-FROZEN STRAWBERRIES, SENGA SENGANA, RED GAUNTLET, KRISTINA, ZEPHYR, OSTARA AND NEW VARIETIES (LIHAMA X SENGA SENGANA, YDUN X SENGA SENGANA AND SENGA SENGANA X RED GAUNLET), WERE STUDIED. ODOUR, SWEETNESS, OVERALL IMPRESSION OF TASTE, SOURNESS, OFF-ODOURS AND OFF-TASTES WERE EVALUATED. SOLUBLE SOLIDS AND TITRATABLE ACIDS OF THE DEEP-FROZEN BERRIES WERE DETERMINED FOR COMPARISON OF THE SWEETNESS AND SOURNESS OF THE DIFFERENT VARIETIES. THE CONCENTRATIONS OF THE MOST IMPORTANT AROMA COMPOUNDS, WERE HIGHEST AMONG SENGA SENGANA, KRISTINA AND LIHAMA X SENGA SENGANA. THESE VARIETIES WERE RATED BEST WITH REGARD TO CHARACTER OF ODOUR AND OVERALL IMPRESSION OF ODOUR. CORRELATIONS WERE ALSO OBTAINED BETWEEN THE TITRATABLE ACIDS AND THE SOURNESS.
