Summary

TWO SEPARATE EXPERIMENTS WERE CONDUCTED ON FROZEN-STRAWBERRY QUALITY. IN ONE EXPERIMENT, THE FRUIT OF 3 CULTIVARS WAS FROZEN SOON AFTER PICKING. IN THE SECOND ONE, THE EFFECT OF STORAGE FOR AT LEAST 6 DAYS AT 279 K (6 DEG C) IN NORMAL OR CONTROLLED ATMOSPHERE ON FRUIT QUALITY WAS DETERMINED. THE MAIN CRITERION WAS ON ORGANOLEPTIC TEST. THE RESULTS INDICATED THAT THE SHORTER THE TIME FROM PICKING TO FREEZING, THE HIGHER THE QUALITY OF FROZEN FRUIT. STORAGE BEFORE FREEZING, REGARDLESS OF THE ATMOSPHERE USED, HAD LITTLE NEGATIVE EFFECT ON ORGANOLEPTIC QUALITY. STORAGE LONGER THAN 6 DAYS RESULTED IN A SEVERE DECREASE IN FROZEN-FRUIT FLAVOUR AND A DECREASE IN FRUIT TEXTURE.
