MEASURING THE STORAGE LIVES OF CHILLED AND FROZEN FISH PRODUCTS.

Author(s) : HOWGATE P.

Summary

THE HIGH QUALITY LIFE OF A PRODUCT IS UNEASY TO DEFINE IN THE CASE OF SOLID, HETEROGENEOUS PRODUCTS SUCH AS FISH PRODUCTS. IF EVALUATED BY THE TRIANGULAR TEST IT IS ALSO MUCH TOO SHORT TO BE COMPATIBLE WITH MARKETING TIME. USUALLY SENSORY METHODS ARE APPLIED TO DETERMINE PRACTICAL STORAGE LIFE: OBJECTIVE METHODS, WITH A TRAINED PANEL, OR SUBJECTIVE METHODS WHERE UNTRAINED PANELS GIVE HEDONIC RATINGS. THERE ARE ALSO METHODS FOR DETERMINING QUALITY DETERIORATION. HOWEVER THE VARIOUS CRITERIA FOR SHELF LIFE DO NOT AGREE WITH ONE ANOTHER.
