QUALITY ASSURANCE IN CHILLED AND FROZEN SEAFOODS.

Author(s) : RONSIVALLI L. J., GORGA C.

Summary

WHEN STRICT QUALITY CONTROLS WERE MADE IN USA ON FRESH FISH FILLETS, THE CONSUMPTION RATE FOR FRESH FISH FILLETS INCREASED DRAMATICALLY. THE USA GOVERNMENT IS NOW CONDUCTING A PILOT COLLABORATIVE PROJECT WITH INDUSTRY TO DEMONSTRATE THE ADVANTAGES OF FROZEN FISH FILLETS. THIS IS EXPECTED TO BE A MORE COMPLEX UNDERTAKING THAN THAT FOR FRESH FISH FILLETS. A FINAL COLLABORATIVE PROJECT IS PROPOSED IN WHICH A FORMAT WILL BE INSTITUTED SUCH THAT ALL FISH LANDED WILL BE OF GRADE A QUALITY WHEN CONSUMED.
