Summary

THE PURPOSE WAS TO DETERMINE THE INFLUENCE OF TIME AND TEMPERATURE OF THE MUSCLE TISSUE, LYMPH NODES AND SPLEEN SAMPLES STORAGE ON THE DYNAMICS OF BACTERIAL CELLS AT 276-277 AND 280-281 K (3-4 AND 7-8 DEG C). THE EVALUATION WAS CARRIED OUT DIRECTLY AFTER RECEIVING THE SAMPLES AND AFTER 24 HOURS. THERE WAS OBSERVED A NEGATIVE DYNAMICS AT 276-277 K AND A POSITIVE ONE AT 280-281 K. THE DYNAMICS CHANGES THE REAL PICTURE OF THE BACTERIOLOGICAL STATE OF SAMPLES AND MAY BE A REASON OF ERRORS IN CASE OF POSTSLAUGHTER EVALUATION OF MEAT.
