Summary

THE TEXTURAL PROPERTIES OF THE SPECIES OF FIN FISH WERE MEASURED AND THE RESULTS COMPARED TO SENSORY EVALUATIONS. LINEAR AND MULTIPLE REGRESSION TECHNIQUES SHOWED GOOD CORRELATION BETWEEN THE INSTRUMENTAL AND SENSORY DATA. UNDERUTILIZED SPECIES CAN NOW BE EVALUATED AND GROUPED ACCORDING TO THEIR TEXTURAL SIMILARITIES. TEXTURAL CHARACTERISTICS OF EACH GROUP CAN BE IDENTIFIED BY THE MORE FAMILIAR SPECIES BELONGING TO THEM.
