TRANSPIRATION AND RESPIRATION LOSSES OF FRUIT AND VEGETABLES ARE DRASTICALLY REDUCED AS STORAGE TEMPERATURES DECREASE. HOWEVER, THE COSTS ASSOCIATED WITH ENVIRONMENTAL CONTROL OF A PRODUCE STORE INCREASE AS STORAGE TEMPERATURES DECREASE. THIS STUDY OUTLINES A DETAILED DYNAMIC PROCEDURE FOR ESTABLISHING THE OPTIMUM TOMATO STORAGE ENVIRONMENTAL CONDITIONS IN ORDER TO MINIMIZE TOTAL COSTS OF STORAGE.
