Summary
FOR THE AUTHOR'S EXPERIMENTAL AND ELECTRON MICROSCOPIC INVESTIGATIONS OF THE CHANGE OF CONDITION ON FISH DURING THE STORAGE PROCESS IN REFRIGERATED SEA WATER, ESSENTIAL INFLUENCES ON QUALITY AND BEHAVIOUR OF THE PROCESS OF SPOILAGE ARE ASCERTAINED. INFLUENCES OF THE METHOD OF STORAGE AND OPERATION ON THE SPEED OF COOLING DOWN IN FISH WITH THE REFRIGERATED-SEA WATER METHOD ARE INDICATED. FOUR INTERNATIONAL PREVALENT METHODS OF WET STORAGE ARE DESCRIBED WITH THEIR ADVANTAGES AND DISADVANTAGES. THE SELECTED METHOD FOR EXAMINATIONS OF CHANGES OF MASS AND TISSUE STRUCTURE OF FISH DURING THE REFRIGERATED-SEA WATER STORAGE PROCESS IS CLASSIFIED.
