Summary

Retail display cabinets are complex machines that work under variable conditions. They exchange permanently air, heat and moisture with the store environment. A simulation software was developed to predict with precision the performance of any open display cabinet working under variable conditions determined by: ambient temperature, ambient humidity, evaporation temperature, temperature of the cabinet, types of defrosting, percentage of produce charge. The output of the programme gives detailed balances of loads, capacities, water mass recuperation, air temperature in critical points of the cabinet, produce temperatures during cooling and after defrosting.
