Summary

FILLETS WERE PACKAGED IN ONE OF THREE ATMOSPHERES: GAS TRI-MIX (50 % CO2, 40 % N2, AND 10 % O2 ), VACUUM OR 100 % AIRAND HELD AT 275 K (2 DEG C) FOR 21 DAYS. QUALITY CHANGES WERE MONITORED USING MICROBIOLOGICAL ANALYSES, DRIP LOSS, AND COLOUR. AEROBIC, PSYCHROTROPHIC, AND ANAEROBIC PLATE COUNTS INCREASED IN ALL TREATMENTS OVER STORAGE TIME. A GREENING OF THE GAS TRI-MIX PACKAGED FILLETS WAS NOTED IN THE FIRST STAGE (0-7 DAYS) OF STORAGE, FOLLOWED BY DARKENING IN LATER STAGES OF STORAGE (AFTER DAY 14).
