Summary

PREVIOUS WORK WITH HAKE FILLETS STORED UNDER MODIFIED GAS ATMOSPHERE SHOWED THAT THE SHELF LIFE COULD BE EXTENDED BY UP TO FIVE DAYS AT 0 DEG C. THIS PAPER DESCRIBES FURTHER STORAGE TESTS WITH HAKE FILLETS PACKED IN LAMINATED PLASTIC MATERIALS TO SIMULATE COMMERCIAL CONDITIONS AS CLOSELY AS POSSIBLE. FISH FILLETS THAT WERE EITHER GAS-PACKED WITH SEVERAL GAS MIXTURES, AIR OR VACUUM PACKED, WERE STORED AT TEMPERATURES OF 1 AND 5 DEG C FOR QUALITY ASSESSMENT USING BACTERIOLOGICAL, CHEMICAL AND SENSORY METHODS OF ANALYSIS.
