Summary

FRESH WATER CATLA CATLA FILLETS IN 100 TO 120 G LOTS WERE SEALED IN 12-MICRON PLAIN POLYESTER LAMINATED WITH 230-GAUGE LOW-DENSITY POLYTHENE CONTAINING 50% CO2 AND 50% O2 (A), 80% CO2 AND 20% O2 (B), AIR (C) AND STORED AT 273-277 K (0-4 DEG C). THE SHELF LIFE OF FILLETS WAS PROLONGED BY A FACTOR 2.3 USING GAS B AND 1.7 USING GAS A, AS COMPARED C. THE INITIAL BACTERIAL FLORA CONSISTED OF 45% ENTEROBACTERIACEAE. AT THE TIME OF SPOILAGE THE BACTERIAL FLORA IN C WAS MAINLY A, AEROMONAS (87%). SAMPLES STORED IN GAS A, AEROMONAS WAS 63%, LACTOBACILLUS 25%, VIBRIO 3% AND ENTEROBACTERIACEAE 9%. SAMPLES STORED IN GAS B HAD 48% AEROMONAS, 33% LACTOBACILLUS, 5% VIBRIO, 5% BACILLUS AND 9% PSEUDOMONAS. ATMOSPHERE B SEEMS TO BE THE MOST SUITABLE FOR PROLONGING THE SHELF LIFE OF CATLA CATLA FILLETS.
