Summary

THE ICED STORAGE CHARACTERISTICS AND SHELF LIFE OF CULTURED MAJOR CARPS, NAMELY, ROHU (LABEO ROHITA), MRIGAL (CIRRHINUS MRIGALA) AND CATLA (CATLA CATLA) WERE STUDIED. THE CHANGES IN SALT EXTRACTABLE NITROGEN, WATER SOLUBLE NITROGEN, NON-PROTEIN NITROGEN AND TOTAL VOLATILE BASE NITROGEN WERE STUDIED. DURING THE PRE-RIGOR AND RIGOR PERIOD THE AMOUNT OF SALT EXTRACTABLE NITROGEN WAS LOW IN ALL THE THREE SPECIES AND INCREASED POST RIGOR. THE TOTAL BACTERIAL PLATE COUNT INCREASED SLOWLY AND REACHED 1 MILLION WHEN SPOILAGE STARTED. MESOPHILES CONSTITUTED NEARLY 90% OF THE BACTERIAL POPULATION. ACCORDING TO ORGANOLEPTIC RATING ROHU HAD A SHELF LIFE OF 16, MRIGAL 15, AND CATLA 17, DAYS.
