STUDY, ON AN INDUSTRIAL SLAUGHTERING LINE, OF THE EFFECTS OF WASHING, OF INTERMITTENT CHILLING BY COLD WATER SPRAY AND OF CARCASSE FAT COVER ON MEAT YIELD AND WATER CONTENT IN THE MUSCLE. IT IS SHOWN THAT BOTH TREATMENTS HAVE A VERY IMPORTANT INFLUENCE ON WATER RETENTION IN THE CARCASSE TISSUES.
