APPLE CUTICLE CONTAINS MATERIALS ABLE TO REDUCE AND STOP FARNESENE OXIDATION. COLOUR RESPONSES SHOW THAT THEY INCLUDE TERPENIC AND POLYPHENOLIC COMPOUNDS. THERE IS A CORRELATION BETWEEN ANTIOXIDANT CONCENTRATION AND THE DEVELOPMENT OF THE PATHOLOGICAL BROWNING OF APPLE SKIN AND SCALD. THE ANTIOXIDANT CONCENTRATION AND THE NUMBER OF THESE COMPOUNDS DEPEND TO A LARGE EXTENT ON APPLE VARIETY.
