Summary

AT THE LABORATORY OF FISH PROCESSING BY REFRIGERATION, ATLANTNIRO, NEW FREEZING PROCESSES WERE STUDIED FOR TUNA, MAINLY BY MEANS OF A CALCIUM CHLORIDE SOLUTION AND LIQUID NITROGEN. THE TEST CARRIED OUT ON BOARD SHOWED THAT THE USE OF THE CALCIUM CHLORIDE SOLUTION DECREASES THE FREEZING TIME BY 1.5 TIMES AND THAT FROZEN STORAGE INCREASES BY 1.5 TO 2 TIMES. THE USE OF LIQUID NITROGEN GAVE GOOD RESULTS TOO. R.R.
