Summary

The ripening indices for harvesting of banana fruit on the basis of transport time are described and discussed. The most frequent post-harvest physiological and infectious diseases are described and illustrated with colour pictures. The technology of banana handling and packaging is reviewed and discussed. The importance of precooling of fruit before transport is pointed out, and operating modes are suggested. The methods of preserving banana quality during transport and storage (controlled atmosphere, ethylene removing, hypobaric storage) are discussed. The biochemistry of ripening is reviewed, and the techniques applied to the artificial ripening process are described, and the most suitable ones are pointed out. A.P.
