THE CONSUMPTION OF OFFAL DECREASED BY 32% BETWEEN 1989 AND 1990. THE MARKET FOR FROZEN OFFAL WAS NEARLY 9,350 TONNES IN 1989. THE REASONS FOR THIS SLUMP ARE ANALYZED, AND RECOMMENDATIONS ARE GIVEN TO IMPROVE FRENCH PRODUCTION, NOTABLY RESEARCH INTO QUALITY, AND AN INFORMATION AND PROMOTION CAMPAIGN.
