Summary

Tangential microfiltration, applied in numerous cases in the food industry, should be able to find outlets in oenology, as long as a suitably-designed filter can be used. Such a filter was developed through a collaboration with the Wine and Vine Technical Institute, the Burgundy University, the Ensigc in Toulouse and the companies: Imeca, Techsep, and Loron. The results of several tests made with this new filter are given, for removal of microorganisms as well as tartar stabilization, as a complement to refrigeration.
