Original application of humid cold: precooling of melons and preservation of their quality.

Summary
Results show clearly that humid cold makes it possible to cool pallets of melons rapidly and limits changes in quality. Furthermore, the time between harvest and cooling seems to be one of the most important parameters for controlling quality in melons during marketing.
