IF CHILLED MEAT HAS TO BE SHIPPED TO REMOTE COUNTRIES, THE PRODUCT SHOULD HAVE A RELIABLE STORAGE LIFE OF ABOUT 12 WEEKS, FOLLOWED BY A SHELF LIFE OF AT LEAST 5 DAYS. FOR MOST RED MEATS, IT IS NOT POSSIBLE TO MEET THIS REQUIREMENT WITH THE VACUUM-PACKAGING OF THE PRODUCT. HOWEVER, PACKAGING IN CO2 CAN EXTEND THE STORAGE LIFE AND SHELF LIFE OF CHILLED RED MEAT DURING THE TIME REQUIRED PROVIDED PACKAGING IS ESPECIALLY DESIGNED FOR LIMITING THE DETRIMENTAL EFFECTS OF CARBON DIOXIDE ON MEAT APPEARANCE.
