THE EFFECT OF LIGHTING ON COLOUR OF BEEF.

Summary

BEEF PACKED IN A FOODTAINER OVERWRAPPED WITH PVC OR IN MODIFIED ATMOSPHERE WAS PLACED AT THE TOP OF A DISPLAY CABINET ILLUMINATED EITHER BY FLUORESCENT TUBES OR BY UV TUBES. SOME PACKAGES WERE ALSO COVERED BY A PLASTIC ABSORBING UV RAYS. WITH NIGHT COVERS DURING 17 HRS PER DAY THERE WAS ONLY A MINOR DIFFERENCE BETWEEN THE CONTROLS AND THE TEST SAMPLES. WITHOUT NIGHT COVERS, THE SAMPLES PLACED IN A REFRIGERATED CABINET AT 280 K (7 DEG C) THERE WAS LESS DSOOIG THE PLASTIC ABSORBING UV RAYS REDUCED THE OCCURRENCE OF DISCOLORATION. THE RESULTS SHOW THAT THE LIGHTING OF RETAIL CABINETS MAY RESULT IN THE APPEARANCE OF A DISCOLORATION IN CHILLED GROUND BEEF, BUT THAT THIS EFFECT DOES NOT OCCUR IN THE SAMPLES PACKED IN PVC. WITH MODIFIED ATMOSPHERES, A PLASTIC COVER ABSORBING UV RAYS PROVIDES SOME IMPROVEMENT ALTHOUGH IT IS NOT SURE THAT THE EFFECT JUSTIFIES THE USE OF THIS TYPE OF PLASTIC IN PRACTICE.
