Summary

Psychrotroph bacterial species that can growth at or below 7°C are presented. Among poisoning bacteria, Listeria monocytogenes, Yersinia enterocolitica, Clostridium botulinum E and Aeromonas hydrophila have been reported to grow at the lowest temperatures. The metabolic activities of all microorganisms can be stopped at freezing temperatures. These temperatures have been shown to cause metabolic injury to microorganisms and even to kill some of them. Bacteria differ in their capacity to survive during freezing.
