Pathological problems in the cold storage of carrots.

Summary

The main pathological problem in the cold storage of carrots is a microorganism, Mycocentrospora acerina, which can infect roots from 0.5 deg C. Humid cold (0.5-1 deg C, 98% of relative humidity) is the least risky as far as disease development is concerned; it is possible to limit the development of this pathogenic substance during the growing period or after harvest.
